The only thing I measured was the flax, I also change the spices just about every time I make these. So, pick what sounds good to you and add more than you might think you'll need because the zucchini tones it way down.
These muffins are great on the go and are super moist. Also great to freeze for stand-by meals.
~ 5 C shredded zucchini
2 packs extra lean ground turkey
1 1/4 C ground flax
3 muffins amount to 5 oz turkey and a little over 2T flax
Combine spices with turkey in bowl (if you're not using your hands, you're missing the most fun part, what's wrong with you?) then add zucchini last.
Divide evenly over 24 muffin tins. And bake at 375 for 30-35 mins.
